Chocolate Lava: Melt the dark chocolate and UniWhip neutral using a microwave at the lowest heat for approx. 2 minutes. Mix well until you are left with a runny consistency.
Pour the melted dark chocolate into the sphere moulds and freeze for approx. 2 hours or until they are cold and firm. This will be your chocolate lava.
Cookie dough: Pour all the ingredients into a mixing bowl. Mix at a low speed for 2 minutes and medium speed for 3 minutes.
Scale the dough into 40g pieces. Mould into ball shapes and gently press the dough balls flat with the palm of your hand.
Place the chocolate lava, from step 2, into the center of each dough ball.
Bring the edges of the dough into the center until the chocolate lava is completely covered. Try to smooth the edges of the dough to make sure that there are no holes.
Place all the cookies into a freezer for at least 1 hour or until they are firm.
Bake at 160°c with a fan oven or 180°c with a deck oven for 11 minutes.
