Golden Muffin Mix - Apple & Cinnamon Cupcake

Baking temperature: 180° C
Baking time: 20 – 25 minutes
Outcome: 8 Cupcakes
Tools needed: Mixer including bowl, kitchen scale, baking tray, cupcake holders, piping bag and piping tip.
Ingredients and Method
Method
- Apple cinnamon cupcakes: Mix all the ingredients, except the apple filling, for 5 minutes with a spatula, until a smooth consistency.
- Pour the cake mixture into cupcake holders, approx. 70 g in each.
- Add approx. 25 g of the apple filling into the center of the cupcake holders.
- Pour cake mixture on top of the apple filling, approx. 70 g in each.
- Bake at 180°c for 20-25 minutes.
- Set aside and allow to cool.
- Yoghurt cream: Mix all the ingredients, except the food colouring and yoghurt, for 3 – 5 minutes on a medium speed or until smooth.
- Add the yoghurt and mix for another 3 minutes on a high speed.
- Once the mixture is creamy then add the food colouring and mix until the colouring is fully mixed in.
- Scoop the yogurt cream into a piping bag and pipe onto the cooled cupcakes.
