Gluten Free Brownie Mix – Chocolate Cookies

Baking Time: 10 minutes
Outcome: 15 cookies
Tools needed: Mixer including bowl, kitchen scale and baking tray
Ingredients and Method
Ingredients
- 250 g Gluten free Brownie mix
- 30 g Potato starch
- 100 g Butter
- 30 g Whole eggs
- 90 g White Chocolate drops
Method
- Mix all ingredients, except the chocolate drops, for 3-4 minutes on a medium speed.
- Add the chocolate drops to the dough and mix together for 1 minute on a medium speed.
- Scale the dough pieces to the required size, Small cookies: 20 – 30 g, Medium cookies: 30 – 45 g and Large cookies: 45 – 70 g
- Mould the dough pieces into ball and gently press the tops of the dough down.
- Sprinkle some chocolate on top of the dough pieces for topping.
- The oven should have a temperature of 180°C - 190°C when you put the cookies in.
- Bake the cookies for 10 – 15 minutes.
