Outcome: 12 Muffins

 

Tools needed: Mixer including bowl, Kitchen scale, baking tray and muffin cups

Ingredients and Method

Ingredients

  • 417 g Golden Muffin
  • 42 g Brown Bread Concentrate
  • 4 g Baking powder
  • 4 g Cinnamon powder
  • 125 g Vegetable oil
  • 167 g Eggs
  • 106 ml Water, approx.
  • 104 g Muesli mix
  • 104 ml Fruit juice

Method

  1. Marinated muesli mix in fruit juice for 15 minutes.
  2. Mix all Ingredients together except muesli into a smooth batter for 3 minutes on a medium speed.
  3. Drain the fruit juice from muesli mix and add the muesli mix into the mixing bowl. Mix a further 1 minute on a medium speed.
  4. Pour approx. 80 g of the batter into muffins cups.
  5. Place the muffin cups onto a baking tray.
  6. The oven should have a temperature of 190° C - 200° C when you put the muffins in.
  7. Bake the muffins for approx. 24 minutes or a core temperature 95° C.
