Brown Bread Concentrate - Muesli Muffin

Tools needed: Mixer including bowl, Kitchen scale, baking tray and muffin cups
Ingredients and Method
Ingredients
- 417 g Golden Muffin
- 42 g Brown Bread Concentrate
- 4 g Baking powder
- 4 g Cinnamon powder
- 125 g Vegetable oil
- 167 g Eggs
- 106 ml Water, approx.
- 104 g Muesli mix
- 104 ml Fruit juice
Method
- Marinated muesli mix in fruit juice for 15 minutes.
- Mix all Ingredients together except muesli into a smooth batter for 3 minutes on a medium speed.
- Drain the fruit juice from muesli mix and add the muesli mix into the mixing bowl. Mix a further 1 minute on a medium speed.
- Pour approx. 80 g of the batter into muffins cups.
- Place the muffin cups onto a baking tray.
- The oven should have a temperature of 190° C - 200° C when you put the muffins in.
- Bake the muffins for approx. 24 minutes or a core temperature 95° C.
