Brown Bread Concentrate - Apple Crumble

Tools needed: Mixer including bowl, kitchen scale, baking tray cake size 60 x 20 cm
Ingredients and Method
Ingredients
- Basic batter
- 720 g Golden Muffin
- 100 g Brown Bread Concentrate
- 10 g Baking Powder
- 8 g Cinnamon powder
- 275 g Eggs
- 215 g Vegetable oil
- 160 ml Water, approx.
- Crumble
- 125 g Wheat flour
- 25 g Brown Bread Concentrate
- 25 g Egg
- 75 g Sugar
- 75 g Butter
- Apple Filling
- 175 g Apple filling
- 325 g Water
Method
- Mix all Ingredients of basic batter, except Apple filling, for 3 – 4 minutes on the medium speed
- Mix all ingredients of crumble with Beater for 5 minutes
- Pour 1988g of the basic batter per tray (60 x 20cm) and spread evenly
- Mix the apple filling, 175 g, with water, 325 g, in mixing bowl and leave to stand for 2 hours.
- Pour the apple filling mix into a piping bag and pipe dots of apple filing on top of the batter.
- Sprinkle with crumbles (325 g per tray)
- The oven should have a temperature of 180° C when you put the crumble cake in.
- Bake the crumble cake for approx. 45 minutes or until the core temperature reaches 94° C
