Brown Bread Concentrate - Apple Crumble Mr.Passart Wongprom (Chef Mhee)

Tools needed: Mixer including bowl, kitchen scale, baking tray cake size 60 x 20 cm
Ingredients and Method
Ingredients Basic batter 720 g Golden Muffin 100 g Brown Bread Concentrate 10 g Baking Powder 8 g Cinnamon powder 275 g Eggs 215 g Vegetable oil 160 ml Water, approx. Crumble 125 g Wheat flour 25 g Brown Bread Concentrate 25 g Egg 75 g Sugar 75 g Butter Apple Filling 175 g Apple filling 325 g Water Method Mix all Ingredients of basic batter, except Apple filling, for 3 – 4 minutes on the medium speed Mix all ingredients of crumble with Beater for 5 minutes Pour 1988g of the basic batter per tray (60 x 20cm) and spread evenly Mix the apple filling, 175 g, with water, 325 g, in mixing bowl and leave to stand for 2 hours. Pour the apple filling mix into a piping bag and pipe dots of apple filing on top of the batter. Sprinkle with crumbles (325 g per tray) The oven should have a temperature of 180° C when you put the crumble cake in. Bake the crumble cake for approx. 45 minutes or until the core temperature reaches 94° C
